A real aromatic richness for this coffee from the Finca La Fortaleza where it exists side by side with several varieties of Arabica Catuai, Caturra, and Bourbon Pache. Grown at a rather high altitude, this specialty coffee reveals spicy, citrus and cold tobacco notes on the palate.
Finca La Fortaleza is a biodynamic farm that promotes permaculture. It's located in the La Victoria district in southwest Honduras and is part of the COMSA Cooperative created in 2001. Like many cooperatives that promote synergy, COMSA's dynamics are identical: increase yield by instilling a philosophy focused on quality and sustainable development. This is why the COMSA Cooperative is now recognised for producing the best coffees in the country.
In fact, the Finca la Fortaleza is at the helm of COMSA's new experiments. It has a chromatology and biology laboratory where soil samples are taken and analysed. By using medicinal and entomopathogenic bacteria, plant diseases are better understood and nature is preserved from insecticides harmful to flora and fauna.
